No one uses Ruby for anything besides Rails. And no one chooses Rails for new projects.

basically this. OP, if you really want to make gaymes using ruby because it's so useful consider using it as your scripting engine instead of something like lua

None, use Lua (Love2d) or Python (Pygame).

python would be better, considering you already know ruby, the transition would be easier and its used way more in production. e.g. youtube video player uses python, d*scord also uses python.
i dont make games with python but there is a library called pygame that would probably be a good place to start.
pygame is trash don't listen to this guy. basically anything written in it is essentially going to be useless and ineffective after about 30-45 days of commits

Gosu is what a few games I know of have been made with.
Ruby + gosu or Ruby + dragonruby
Lua + Love2D.
too bad Lua sucks too. otherwise, Love2D is a cool project.

Ruby is great and Rails is GOAT (and it actually puts food to my table)
Not sure I would use it for game dev though. My main concern would be the garbage collector triggering and doing heavy stuff, but maybe it has been solved by ruby 3.1 incremental garbage collector
I like the aesthetic of Ruby but I hate the syntax.
