I just replayed it yesterday and there are a couple of areas where they didn't and there was no option other than to just die or reload checkpoint
super gore nest meat room with the 4 teleporters comes to mind
it's just annoying to have to hunt around for a zombie that maybe spawned when you need it just to get some ammo

They respawn in the meat room. Also, you have infinite frag grenades.

The punch doing no damage is moronic but you can do similar damage to the first games punches by dashing into enemies
The thing that gets me about the no-damage punch is that they even fricking added a new blade to your suit but you can't use it at all outside of finishers.
It's like as if it was originally designed to be your emergency melee weapon but then they backpedaled on it for whatever reason.
There were ammo and ammo problems in the oiginal too. The originals have no problem starting players off in the next level with one bullet and little health and no armor.
I realized what I hate about eternal, its not even the move rotations, granted I dont like them. Its that I have to move pinata to pinata for whatever resource is running low and then use the move for said resource. Ill admit the glory kills arent the worst thing, its specifically needing to move enemy to enemy like some kind of Kill Confirmed shit where I get armor or health or ammo.
I really tried to enjoy it but its simply not for me
getting ressources is literally just killing enemies, which is the entire point of the game, You literally get rewarded for just fighting without any real downtime, i dont understand the issue at all, you just actually have to pay attention to what you're doing.

you might have a point if the levels were well designed, but theyre open arenas, meaning if I shoot and kill someone was further than 6 feet away (one of the major conveniences of the invention of the firearm) I now have to go and "PICK UP MY TAGS"

the levels are amazingly designed though, you have multiple ways to get from point A to point B at any time, them being arenas doesn't make them bad.
As for pickups:
-The pickup range is massive
-You don't need to pick up EVERYTHING, you will naturally move around while fighting and pick it up eventually
-Your most powerful weapon is a close range weapon so you'll naturally pick up stuff while fighting, the ways to get armor are also both close range.
You don't have to like it but your reasoning is still deeply flawed
I didn't run out of ammo for a single gun almost every after I understood the chainsaw is an ammo box

Guns are ducking strong, the SSG does 1.7 times more damage per blast compared to 2016 version, rocket launcher does TWICE more damage.

running out of ammo is normal in eternal it relies on and encourages you to use the chainsaw for magic ammo system which is fine unless no fodder enemies spawn and there are several areas of the game where that is the case, the whole thing breaks down
at least 2016 they give you a shitty pistol to fall back on
