The changed their design philosophy since the game released. Play any server with crits disabled. It's always a stomp. Crits give breathing room to the losing team.

The answer for teams being unbalanced is 5CP by the way. The gamemode handles unbalanced teams the best way you honestly can by simply having matches with unbalanced teams end quickly so a scramble can happen and you spend more time on the games where the teams are more balanced.
The problem is 5cp has other problems which will never be fixed because the gamemode is criminally underappreciate by tf2gays.
I've grown to love 5CP over the years. Stalemates are fun, feeling the back and forth of each team's influence is fun, and like you said, it's the best at handling rolls. I loathe the argument that I constantly see that 5CP is only good for Competitive play. 12 vs 12 5CP is glorious and adds in enough chaos to facilitate the gamemode's strengths.

this map became shit the moment they removed the random staircase on top of one of the buildings, you used to be able to build stuff in there and I'd use it for sentries and teleporters

Don't get me wrong I'm sure the nerf was well warranted. But I do wonder how much of people complaining about original backburner was people who were still trying to fight a close range class at close range. Thing about 2007 pyro was he was so shit you could kill him really brainlessly and I'm wondering how much people were just not adjusting to the fact you needed an actual strategy like "don't let him get close" to deal with him.
Airblast was the way forward with the class for sure though, way more interesting than making a second spy class.
at the time airblast was a brand new thing, so it was just an extra 75 hp on top of what pyro already was capable of doing.
and no, 75 isn't a mistake. You need to remember how easy it was to shove a medigun into them and just let them walk forward
having 50 more base health already change important breakpoints for killing a pyro, now you couldn't and that meant you're stuck fighting them for at least 3 well-placed shots

You didn't necessarily need much. Scout could keep his distance, soldier/demo have movement, and the ability to sent pyro into the air and heavy still have more hp and damage at close range. Any other class was support and meant to be dying to pyro anyway.
