I think both are great but 3 has a garbage main story and the weapon variety sucks ass compared to NV.
I actually believe sweet baby Inc has a team making threads to prevent people from playing NV and nothing makes me overlook NV problems more than that. I concinced my son to play NV and making sure he shills this shit to all his friends too. They are going to be the next gen of fallout players that instead of saying fallout died after 2 will say anything that's not like new Vegas is bullshit. That's my contribution as a 40 yo boomer to the franchise that died at 2 but NV makes troonys seethe so much I have to make it happen.
Fallout 1 - Great RPG
Fallout 2 - What would be a great RPG marred by Rick and Morty writing with constant pop culture references that are straight out of reddit that the franchise has never quite recovered from
Fallout 3 - Decent transition to 3D that has a nonsense main quest but decent sidequests
Fallout NV - Better than 3 but unf the writers couldn't help themselves in places
Fallout 4 - Barely an RPG, okayish looter shooter
I think FO3 is trash, but I have to give credit to the hacking/lockpicking minigames because they don't get tedious even after 100 hours

Butcher Pete was the song that people mentioned the most out of the OST, I remember. Bingo, Bango, Bongo too, but I think that was more of an annoying earworm that drove people insane.
