Quite a lot. In fairness, it's a sequel so not necessarily intended to replace the original. In reality, though, many of the scenes that should have remained virtually unchanged have significant differences that are worse.
For example, the plate collapse is a joke. The entire section of Aeris walking around looking for Marlene while everyone escapes is ridiculous. Is she in a hurry or not? Seemingly nobody dies and you can return despite an entire fricking city being dropped and all that's around is a bit of rubble. Biggs, Wedge and Jessie all have long drawn out death scenes, despite the players being in a hurry. In the original they have very short bits of dialogue telling you to go on; now they have 5 minute "dramatic" cutscenes.
Also, the Shinra building prison escape. No blood trail, just a purple goo mess. Padding in the form of Hojo's lab ruining pacing. The president is hanging off of the side of the building for seemingly no reason, then Barrett goes inside to have a chat with him while the rest of the party wait outside because...???? And of course, Sephiroth is not menacing in this scene because we've seen him every 5 seconds gurning at the player over and over.

I've gotta wonder how strange it was for people who never played the original and went into 7R expecting a remake to, in the middle of an emotional moment where potentially thousands of people are dying, see a wacky animated cat suddenly bumble onto the scene and start crying. Surreal.
I think as long as you keep your expectations low and without nostalgia goggles, the game would still be fine even though it is not 100% original.
As for the story frickup, so far nothing really major, so we shouldn't judge, but Sephiroth was showing too often and it was so annoying.
All and all, it was a great game for both old fans and those new to the franchise.

I have extreme FFVII autism. I beat it multiple times as a kid, and multiple times as an adult, I even did a 100% completion run which took me hundreds of hours. I'm scared to play the remake. I feel like I'm going to hate every second and that it's going to shit on everything I love about the game. Should I just bite the bullet and torrent it anyway? I don't want to seethe the entire time kek but I'm also extremely curious and have been avoiding it for a long time now.
I played through VII 36 times and 100% it 11 of those times. I was infuriated by the Remake every two minutes and couldn't play more than two hours of it before quitting it forever.
