If you want something a bit more structured and less RPG, check out solo board games. I suggest Hadrian's wall with the campaign stuff, or Shu's tactics. The most "solo RPG in a box" would be Sleeping gods. Amazing game, personally I love it, but you'd also need to carry around the books and cards. Though they do fit in my backpack pretty well and I can go through a few rounds during my lunch break.
Just use the available downtime to prep for running a campaign down the road, not across the street 🙂

Generally when you look for 'solo RPGs' you end up with a bunch of pretty shitty systems that are strung together using vague oracle mechanics. Honestly it just isn't a very satisfying experience.
I would say you are going to enjoy yourself much, much more if you just play some gamebooks. They are honestly a better experience than most ttrpgs with a group these days.

Solo RPG are very satisfying if you have imagination or use pre written adventures (preferably dungeons, not free roam). They allow you to explore stuff you couldn't in group RPGs, even playtest.
Though I do agree with game books. Most groups these days are Critical Role fans, and especially after WotC shat the bed they spread across other RPGs and noe complain that it's not like Critical Role. I can hope the two RPGs they are making will contain those brainletts.
