That's also my main concern, DF got really boring as soon as I figured out how to make a safe self sustaining fort, which doesn't take much

Yes, there are too many games to play so I only give my time to exceptional ones, not something good enough that has an ok dollar to time ratio

same as any other level-less city builder. once you figured out stability, game's over.
with that said, multiple races do lead you to have a lot of nuance to how you play
I've only played DF but from what I've seen Songs of Syx is better than Rimworld.
Dwarf Fort isn't really even in the same category as the other 2. DF is a story writing tool.
