Because it allows you to create a more unique experience. If you're going to have not Green Hill Zone in your game, at least make new assets for it instead of rehashing the same models like SEGA does.
Also, like others has said, going the extra mile to make something you made yourself is more appreciative than stealing assets from SEGA directly.

Game won't stay full screen for me, though. As soon as I leave Options it reverts to windowed.
