The reason Morrowind lets you do this is because the NPCs are static so nothing can randomly get them killed, only you can kill them which is a conscious choice. I was replaying Oblivion recently and I wanted to start the thieves guild questline, but when I went to the waterfront a conjurer appeared and started attacking NPCs and killed the wood elf girl that's essential for that quest, there was no way I could save her either unless I reloaded the game and killed him with the console as soon as I got there. If she had actually died and not gone unconscious my playthrough would have been over.
A good example of this is the orc butler at the Skingrad castle, who's needed for another quest and who you buy the Skingrad house from. He's the only quest-related NPC they didn't make essential afaik and there are countless posts online from people who couldn't advance because he died off-screen by walking off a bridge or something. Mind you this is with the toned down radiant AI that made the final cut of the game, the original system would have resulted in even more random NPC deaths. So you either get boring static NPCs or some are made essential. I guess a good middle ground would be making them unkillable from everything but the player, so you can still choose to kill them if you want.
Another way to do it which would be much more complicated but, if you have "essential" NPCs that get killed, then they are replaced by new NPCs later on. For instance if you need to talk to the head of a guild but they died, then you wait a bit and someone else becomes the head of the guild, like a new NPC that came to the town for the job

i actually tested this in dos 1 and discovered that Swen is a filthy liar, there are 2 unkillable npcs in the shadow realm or whatever, and if you kill the b***h in white too early you will actually soft lock yourself and will have to use bugs to finish the story. So its 99% of npc's
