In all honesty video games have gotten I enjoyably hard. Everyone took note of the souls series, and not in a good way. That includes Miyazaki himself.

Yeah it doesn't help that most games don't even know what the frick they're doing.
For example, in Demon's and Dark souls 1 enemies did huge damage to you BECAUSE their attacks are clear, easy to read and easy to dodge making it more punishing if you do actually get hit. That's where the sense of danger came from.
But then souls games just kept making enemies faster, more adaptive, counters and punishes out the butthole but the damage calculations were never touched to accommodate these changes.
There was magic in the OG souls games and Bloodborne. It was balanced and not over the top difficulty. I really wish he didn’t buy into the difficulty hype bullshit. I found Elden Ring basically unplayable. Maybe Sekiro is good, but even when I beat a boss, I felt exhausted and that it wasn’t worth the time spent. It definitely didn’t feel like a payoff.

There were some enemies that made me go "what the frick were they thinking?" like the legendary dual wield ghost. The bosses were atrocious too. I finished the game 100% though because everything else about the game I enjoyed (within reason) but the bosses and difficulty were headscratchers.
If you're going to give an enemy or boss big homosexual wombo combos, you better lower the damage so the player can reasonably adapt and learn in the fight instead of every death being a result of not having precognition about some new moronic move.
They went from summoning being any easy mode option, to it almost being required to beat a boss. In fact, that stupid boss on the tiny horse was pretty much unbeatable if you didn’t summon the NPC’s. I was so let down by that game. The open world wasn’t even interesting.
