JRPGs are among my favorite games, but I've never played this series. Does it not just have the same 5 games, re-released ad infinitum as remasters/special editions/etc? Because that's the main impression I have of it and it doesn't make it seem appealing.
No, Persona and it's father series SMT have been going on since the same time as FF and DQ, hell Persona is proof that the series does all sorts of things like make an entire spin-off series run alongside the mainline. Atlus in general likes to release a "super" version of their game down the line, although it's debatable whether the super versions are better and they don't keep re-releasing the same game. P3 is the only game that got a bunch of re-releases and now a remake.
It's absolutely the best in its own subseries. Actually advanced the merger between dungeon crawler and social sim and made social links mechanical (and thematically!) relevant to the dungeon crawling. Returned demons as regular enemies and axed the awful generic shadows, returned guns and demon negotiations, has real dungeons that are all unique both in appearance and style. It's by far the best Persona game as a game.

But I just can't be arsed with the plot and characters. P4's was so good I just stopped playing the game midway and binged the anime because I wanted to enjoy the story without dungeon crawling.
P3 does the "students who combat stuff after school" thing but it feels so much more serious, I like the setting more. From the very start there's shadows attacking the real world, and you join an organization of pros that fight said thing. I prefer that to kids being social justice warriors.
1 and 2 are like SMT with more story and dialogues, very nice apocalyptic games.

Story, main cast, pacing, it's all below ANY of the previous 4 Persona games. But the fights are snappy, shooting your gun and summoning demons is hella fun, and the final villain is right so I didn't beat him similarly to how I conceded the victory to Sans in the Genocide route.
