How should I start with this series? Can I just pirate the collection and go in blind?
What most people recommend is starting either with 3 or 4. Either is fine. If you can pirate the collection, do so. 1 and 2 are archaic, I like them, but most people that try to start with then nowadays don't stick with the series, which is a shame because from 3 onwards it gets really good.

I will always suggest grimrock but it's a realtime dungeon crawler. It's a substantial entry with some decent mods as well. I also enjoyed Vaporum. Stonekeep if you want something more classic.
There's a big split in people that say they enjoy 'dungeon crawlers'
There's the western style with the main focus on dungeon exploration, usually with a lot of puzzles and traps and the eastern style that usually focuses more on the turn based combat and has that as the factor that drains your resources to balance the exploration
For some reason enjoyers of the former get absolutely livid if you imply that you like the latter more

Etrien Oddysey Untold 1 and 2 were remakes on the 3ds. They made a lot of shit changes, amd the first one made the stupid decision to lock basically all the new content into a shit story mode that uses a predetermined party and thus sucks half the fun out of the game. Untold 2 at least put the new shit in the Only Good Mode even though it still wasted time making story mode, but it's got other problems.

Don't listen to the morons shilling Origins, EO2 has an amazing cooking mechanic. You can google the differences, Untold 1 and 2 are way better, emulate them and don't get the shitty remasters kek.
You can pretty much start anywhere except Nexus. It mostly depends on how much bullshit you're willing to put up with, the later games are much more polished. 1 and 2 got remakes but they're pretty different from the originals and also have story modes so you can definitely play both 1 and its remakes.
If you do want to play the original 1 and 2, play them first, you really won't want to go back after EOU.

3 or 4 are probably the best ones to start with. I started with 2 and it's extremely nostalgic for me, I love its strata and music.
3 has the very frickable fish girls, while 4 has the STICC girls, so yeah either one is fine although 3 seems like a slightly better choice.
