If I've got a friend who has never played this and I haven't played it since the Orange Box, what would be a fairly fun way to get into it with him for a couple matches? Community servers like CS?
I'd say start with simple easily understood maps. Ones with digestible layouts. Don't throw a bunch of information at them. Try to introduce information when they ask, or seem to not understand something. Ex:They try rocket jumping by just jumping and shooting at feet
hope your friend is good with steep learning curves. You should try some modded servers and custom maps in addition to the base game just to show him all the different ways to play this game.

I mostly mean visually/graphically it's showing its age, such as broken lighting, textures, models, and animations. A lot of idiosyncrasies I chalk up to TF2 still using the 2013 build of the Source engine. Even the view models still use the beta models of the mercenaries.
The art style has helped it age gracefully for the most part, but I think a fresh coat of paint could do the game good.

As far as I can tell, Valve servers are riddled with bots and make the game virtually unplayable. I was able to find decent community servers, but it's definitely not that same as the golden age (2007-2010).

Well, that much was obvious in the mid to late 2010's already which was about the time when I started playing TF2 less. Steam says I last played in 2017. I wonder if it's gotten worse since? I remember reading that certain servers I knew and visited have closed over the years. No doubt there still are great community servers with dedicated players though.

No one made an FPS worth playing over TF2 yet
Because it's the last surviving FPS game to have that comfy pub server atmosphere. You can hop onto a pub, see the same regulars, have a bit of banter, not care about winning or losing, not care about playing a meta loadout, and quit whenever you want. You don't even need to care about getting better at the game, because losing catastrophically can be fricking hilarious. No other game does that.
the modded servers and custom maps also keep the game always fresh. Source games are really the only place for that kind of stuff nowadays. Everything else in the market just doesn't have server lists or modding or custom maps or anything like that
much older games are still being played like Everquest 1, Quake, even Quake Team Fortress. why are you obsessing over TF2? you ever been diagnosed with any mental disorders?
