Chi Chi became a b***h. After that it's an absolute desert, even in Namek there's no hot alien girls. Only later he bothered to think about another important female character (18)
Opposite. Toriyama notoriously doesn't like to draw women because he doesn't think he's any good at it, but people kept pushing him to add more females to the character roster of DB. The reason Super has so many girls is because Toriyama doesn't do the art for it, it's all his assistant now.

I don't want my memory of the game to be too fresh. I love how DQIII's overworld is one giant puzzle after you get the boat, and I'm worried that remembering where all the progression items are will cheapen the fun of playing the remake to begin with.

No, you just need to talk to every NPC you come across. Practically everything they say is a hint towards getting something you need, and ports from the Super Famicom version onwards have a log feature that lets you go over things npcs have said before. I want to say that one part involving a Merchant party member might have been pretty obtuse, but I don't remember having to look anything up.
Dragon Quest's character designs are good across the board but it's insane how thoughtfully made the NES ones are. You can tell they were drawn with NES limitations in mind, but they don't feel minimalist at all

ACTUALLY there are some personalities that are more specialized in a specific stat and you might prefer those if you want to build a certain way. For example, Sexy only has a 110% Strength bonus, while Valiant has a whopping 140% bonus; it comes with a decrease in other stat, but you might want your Warrior to focus only on attacking.
Whats the best one? I have played 11 and Builders but not much else besides renting maybe a weekend or two as a child.

Super Famicom. Just make sure you're getting the latest version of the English patch. One of the more commonly-spread ones has a game-breaking bug that'll permanently break your save files.

SNES one, but it's a fan translation and you have to follow the instructions to patch it correctly otherwise the game will start glitching out when you reach the port city.

The class system in DQ3 kind of sucks. I'm sure it was impressive when it came out in 1988, but I can't believe the remake is using the same boring system instead of upgrading to something with more options like DQ9.

Dragon Quest is a normal party-based JRPG.
Dragon Quest Monsters is its monster taming spin-off.
However some of the mainline games also have some elements of monster taming in them, notably Dragon Quest 5.
But nothing akin to say SMT? I'll look into the Monsters spin off if that's the case, maybe 5 onwards.
5 has it and I think 6's SNES version has it but it's tied to a class. After that you have to play Monsters.
