They don't hire just anyone on the street who may have their own style; they hire people that can create the style they are specifically looking for. What ends up happening is a homogenization of output where everything looks sort of "generic". It reminds me of the Demon's Souls remake where they completely sucked out all the personality of the designs.
RE also does this with the environment transitioning from haunted house to sterile lab, but it's also because it's more bio horror (zombies and viruses) vs SH which is closer to psychological horror, ghosts, wizards, mental illness etc
the newer REs are also way closer to western horror standards as it moved more towards an action game
