I haven't played any OoT hacks but unless there's actually a BUNCH of new enemies and bosses and items I don't think I'd care to play it. Unlike SM64 OoT doesn't have really deep gameplay to play around with, imo.
It has tons of gameplay that allow for a lot of custom puzzles. The items available also allow modders to spread them out to allow players to explore and unlock new areas as they go. You can have completely novel loadouts that would never happen in the original game just by mixing up the order they appear in.

I honestly wonder how an Ocarina of Time with something more like the beta field map, and just "more" in-depth environments and feeling like more people and stuff generally happen, would hold up. Like, I just played through the game last week on the PC port with some of the excess fat trimmed via QoL, it's still very solid even if my experience goes a long way towards tearing ass through the game, but considering OoT was intended for the failed 64 Disk Drive, I just kinda wonder "what would the game have been with that addon" sometimes.
You got two: master quest and majoras mask. There's even the missing link which is a pretty accurate rom hack to how Nintendo was designing zelda games at the time.

Yeah yeah I've heard that promise a thousand times. For some reason the new romhacks are all being done based on the original ROM and not this version. Maybe in 10 years time something will come of it
mostly because people have experience and tools made for the N64 version first, and those took the 20+ years the game's been out to reach the point they're at today. the PC port is "feature complete" but actually modding it so far only mostly covers textures and models, it needs more opened up officially to allow people to actually dive in like they can the original release.
It just takes time. Romhacks in SM64PC are finally happening and they look way better than the N64 ones.
