They would be better if the roll attack didn't exist. It's legitimately the most annoying piece of shit aspect in the entire game, the fact that your only way of avoiding it is rolling through it seems moronic. Even then it'll last forever sometimes for no fricking reason.
The more consistent way to avoid the rolling attack is to just run in a circle which matches the rotational velocity of the noble's rolling. Of course, that's a lot more fricking complicated in the duo fight.

just stand on the broken pillar, its the easiest to avoid attack they do
I legitimately think that most people that had trouble with this game skipped 90% of the open world side stuff. I did every single cave and dungeon and was over leveled all the time, literally rolled everything including Malenia.

The only duo I disliked was valiant gargoyles and it's just because they have a really long ranged poison attack. Though if you just lure the first one to the very far corner you should be able to kill it before the 2nd reaches you
Misbegtton + Crucible were tough too but that's only cause it was the first time I encountered both those enemies. Godskin duo was easy just stun the fat guy lol.

Pre-nerf they were a chore to deal with not because of "difficulty", but because they attacked at the same time so they always had hitboxes active to protect one another. You could easily cheese the ever-loving FRICK out of them anyway because it's elden ring, but they were just extra annoying because of their constant attacking. After the patch that nerfed the multi-enemy boss fights, they're beyond a fricking joke.
