Heard lots of good stuff about this mod and I'm interested, though I've been told to at least play Thief 1 and 2 before trying this. What's the ideal way to play those games? Should I use Tfix for Thief Gold or something else?

Use tfix and t2fix for the 2 games, skip the thieves guild and the house mapping mission, know that these games drag towards the end, be prepared for some of the best level design vidya has ever conceived.
Do you guys recommend playing on expert for my first time or is that going to be too much since you have to get all the loot
Expert requires about 2/3 of the loot, not all. It can be pretty tough for the first time but doable. You get to pick the difficulty separately for each mission so don't worry about having to commit to the level you pick initially.
I'm pretty sure that you can choose the difficulty per mission, so just start with the regular one and up the difficulty whenever you feel ready.
You don't need all the loot even on expert, just get used to the game and then see if you can go above hard mode, the game was likely built around expert mode.
Jist get the patches and play the game man, it's a masterpiece.
Play on Hard because you get to access the extra content that normal cucks you out of, but without having to collect so much loot. The loot requirements are no joke

If you want to see the most the missions have to offer then you should play on expert. If you struggle, you can always restart the mission and bump the difficulty down.
Play Thief 1 and 2. Simple as.
And don't skip missions.
Lite versions of TFix and T2Fix, that's all you need without any useless "improvement" mods. GOG versions come prepatched and are good to go right out of the box.

Thief 2 improves greatly on the level design, taking place in more realistic, readily comprehended environments. It makes the in-game map more useful than before, but you hardly need to use it because you can intuit your way through most of these levels.

I played both games for the first time today and the only time I really got lost in the first game was the thieves guild so I don't know what the frick you are on about

No, not really. I just picked a path and followed it to it's end. If it looped back into an area I've already been in I just picked another. As for Cragscleft I had some problems getting into the prison itself until I took a closer look at the map and noticed that the only entrance was through the factory

No, I got lost in Bonehoard, as intended. The moment you open the map and see the big 'where am i?' written over a vague portion, you know you're in for a fricking fantastic game.
Bonehoard is 100% what made Thief click for me back when I was like 12. T2 is a great game, but you t2gays are fricking souless husks of people.
Down in the bonehoard is fantastic. It allows you, as the player, to explore a map drawn by legends and hearsay at your own pace, and doesn't really hold your hand through it.
The first 3 missions help establish Garret as a character: He did a job, and wasn't paid for it. He was willing to break into one of the most secure prisons just to get his payday, and when the guy died, he went on to an abandoned tomb just to get his money's worth.
His landlord must be a pretty ruthless guy..

One thing that hasn't been mentioned is that expert never lets you kill anyone, it's an instant mission failure. Meanwhile hard lets you kill anyone who has weapons. It makes a big difference in how much freedom you have in some missions.
Undead and monsters are free game on all levels.
Song of the Caverns in Theif Gold has the no killing rule applied retroactively halfway through the level.
One second you're taffing about, in the next second it's the game over screen. I still remember how pissed I was as a literal child, realizing I had to redo the whole mission from the beginning.
The rule is right there at the start of the mission. Maybe it was fixed in a patch later?
Another mission where you can kill people is the lost city, because they forgot to add the check in for the gold edition after replacing some monsters with mages, but that's the only one I know of where it's not an instant game over.
You can use blackjack on both difficulties anyway. Killing is unnecessary even harmful because enemies scream when they die

True, there's hardly any reason to use the sword, but the inability to do stealth kills with arrows on expert is what sets the difficulties apart.
If you do play on hard just be sure to not abuse the fact that you don't fail the mission for killing anyone, and should prefer to keep kills at a minimum.
Also consider making an exception and playing on normal difficulty for "The Haunted Cathedral" since the loot requirements on that one are aids. Last time I tried it it took me forever to get enough loot and that was only on hard.
Also note that if you play on a lower difficulty it doesn't stop you from getting the special loot/items mentioned in the higher level descriptions so feel free to still seek that stuff out.
It's garbage and your enjoyment of these games relies on fooling yourself these games are still good because you hate modern gaming and you've brainwashed yourself into thinking a stealth game with more braindead ai and stealth mechanics than your average far cry game is good
don't use TFix, use TFix Lite. I don't know if T2Fix has any problems but the first one breaks the AI since it uses Thief 2's AI and it wasn't designed for Thief 1's levels

It's a good platform for user-made missions, but there's no built-in campaign or story. For me, half of the appeal of Thief is the worldbuilding.

It says here that for us the plebs who didn't play the original, this is the game we need, without the strangeness of the 90s dev design, streamlined with logical, good length maps.
Then it says wrong. It's more like Thief cranked up to 11. The levels are fricking massive with a frickton of shit to do but if it's your first experience with Thief then you'll be helplessly lost.
Good choice anon, Black Parade is the best Thief game but it's way too much for someone who hasn't played 1 and 2 first. Tfix Lite and T2Fix Lite and EAX sound fix are mandatory. I recommend Gold2Dark to roll back your copy of Gold to The Dark Project, it's better for new players, or using the hotkey to skip The Thieves' Guild.
Personally I recommend Hard for a first playthrough instead of Expert, at least until you've played a few missions and gotten the hang of the basics. Also, you should play Deadly Shadows w/ Sneaky Upgrade mod too, you'll appreciate Black Parade more if you do.
