Not JRPGs, maybe. Here's a list of RPGs that have fully realised thievery mechanics - pick-pocketing, lockpicking, trap setting/disarming etc. and/or contain quests tailor made for thieves:

TES games have been fun. Robbing houses isn't mechanically challenging, but, but it's good enough for roleplaying. I like rummaging through the houses in first person, selling stuff for some pocket money.

Thief the Dark Project is kino as others have said, so is its sequel.
On the RPG side of things:
Quest for Glory(the entire series) is excellent in that regard if you play as a Thief class. My personal favourite as a thief is probably the second one(the fan remade version), but overall the fourth game is universally agreed to be the best of the series overall and the rogue side of the gameplay is fun as well, though the heists in it aren't as memorable.
Morrowind was fun to play as a member of the Thieves' Guild I thought.
The Elder Scrolls Online has a solid questline filling that niche as well and being a Nightblade(the rogue class) skulking around major cities and stealing/pickpocketing/lockpicking your way into riches is an entertaining experience at least in my opinion.
Neverwinter Nights has a few acclaimed player created modules that are rogue-centric such as A dance with rogues, which is incredible as a thief cloak and dagger experience. On the topic of NWN as a whole, I've had a lot of fun and fond memories of playing on some PWs in the servers' Thief Guilds. Depending on DM support for said criminal faction, you'd be able to experience the most authentic form of roleplaying venue as your classic thief alongside other similarly inclined people going out burglarizing, frauding people of their money, cutting purses and so on. Still - to get to those very excellent parts, you'd probably have to invest some time in whatever server you choose and be willing to roleplay your character.
I was also going to suggest Quest for Glory. They are so, so fun to play thieves as. I know you're encouraged to be honorable and try to become a paladin, but stealing is just so much fun in those games, and the Thieves' Guild is excellent in 4.
My guy. The Thieves' Guild was indeed kino and perhaps one of my favourite parts of the entire game. Loved that poor wretched guildmaster. Though still - stealing from the Burgomaster and that Old guy was not as interesting and fun of a heist as the thief sidequests in QfG2 at least from what I can foggily remember were better

I hate the general MMOification in some RPGs where ever class is hyper specialized on their specific role. The Fighter with his longsword does 5% of the damage but the Rogue does 60% because Sneak Attack bonuses and multipliers. Cleric only heals. Wizard only throws fireballs. I hate it.
Fully agreed. It annoys me the most with the tank role. Monsters do barely any damage to the designated tank but instantly kill any other class they look at.

That's something that does not make sense to me but kinda happened in all kinds of rpgs from tabletop to computers - ALL player characters are supposed to be adventures, rogues, travelers so they all should have basic skills needed to survive on their own. Lock picking, basic combat techniques or crafting mundane items like torches should be in repertoire of most if not all characters because their lifestyle depends on it.
The idea of "Thief" or "Rogue" as a class is dumb.
Underrail basically requires you to play as a rogue, even if you aren't playing a stealth character. If you aren't using beartraps, grenades, nets, and landmines you are going to have a very difficult time beating enemies.
I wouldn't mind more tanly looking thieves.
