The first two game are a bit dated graphically but personally I think they're better than anything else that came out in the series in terms of plot, characterization and combat. If you could only play one of them, play 2, it's generally better in every way is arguably the best game in the series. The Vita port was ok, too, so it's worth playing that.
SO3 was the first 3D game but it came out at that weird 3d jank era where things look completely off. It's fun, though, with a couple of decent characters though most of them are super generic, but the plot turned a LOT of people off because of how batshit insane it gets. And I don't mean that in a good way.
SO4 was pretty forgettable. Some really nice models, the female human girl has a fantastic ass, but the English dub is AWFUL. I ended up turning the sound off when the e-girl character was on screen just because of how grating that voice was. The plot is super generic and boring, too, and I don't remember much of the combat so it probably wasn't that good. Oh, and it's really short and, if I remember right, did away with the character endings the previous three games had.
Never played 5 but most of what I heard of it is that it's again pretty boring. There's a reason the only thing anyone posts of that game is that one witch character with the ridiculous outfit.
There is (was?) a mobile game but I don't know anything about it.
So the tl;dr is, play 2 if you play only one of them, 1 and 3 are fine, 4 and 5 are skippable.
