SMT V didn't work well because they used the shitty unreal engine for said game, which doesn't work well with the Switch. It's Atlus fault for using a garbage engine, not the Switch. They could have used any other engine that actually worked well with the system.
It's better to compare P5R with Catherine, since they are on the same engine, while SMT V uses unreal which is known for working like dogshit on switch. It also has areas that are far more open than P5's dungeons.

For me it is more like blackmailing. We could have very detailed anime games by now and it is still the same PS2 tier maps made with rulers and characters are switching between preset emotions.
I guess they still sell well enough that the devs/pubs have little incentive to polish them visually.

Upgrading from these ancient engines would take a lot of money. I'm sure jap devs love the switch, no demands for better graphics.
The older and newer Yakuza games are good example I think. They essentially went with the same engine and development paradigms from Y3 to 0. No matter how much it was upgraded it was still essentially Shenmue tier with more memory and sometimes worse details.
Yakuza 6 launched with a new western style engine and it really makes the experience a hundred times better.

The devs are amateurs of course but what could have been a logical leap, even on the PS4 or 3 was missing because the devs wanted simple and cheap. The natural evolution after Shenmue would have been an interconnected city not just a background with loading screens in front of wall doors.
While the gameplay was indeed much tighter in the old system I only enjoyed the city setting in 6 and after.
