They were forced to make Yoshi invincible due to mechanics from previous Mario games (SMW, Galaxy 2) as Yoshi is the quintessential invincible companion animal that takes no damage.

they just released an interview about how they had NO DEADLINE for the development of this game, they probably made the "easy mode characters" so it's easier to play with people using both types of characters instead of switching something in settings every time you play or someone joins
