It's one of the best remakes/remasters I have ever played. They kept everything true to the originals, but added a few improvements and QoL stuff. Some people sperged out about 3 of the original songs missing, but there's 37 new ones that all fit very well, so that makes up for it.
It's made by Vicarious Visions, who also made D2R which is another amazing remaster. They were going to do THPS3+4 as well after D2R, but unfortunately ActiBlizz swallowed them up and turned them into "Blizzard Albany" where they are now a support studio. I hope that one day they will get to do THPS3+4.
real talk, are these games worth it if I have very little nostalgia for them? I mean I do remember playing some Tony Hawk on N64, one on PC, and a bit on PS2 at my friends house, but I sure as shit dont even remember which ones they were

I have no idea how to answer that. The gameplay itself still holds up very well, in my opinion, and I had a lot of fun completing both games. If you are in doubt, you can always just pirate it and see if you'd enjoy it or not.
I got bored of them when I rented them both for like 1.99 on PS1
They're retty short. For 39.99 you'll get maybe 3-4 hours out of them at most so it's basically a straight trade for money from working for same time in ertainment

Yes they are still some of the best games of all time
they're still great at what they do, but if you want a ton of content to get through and the gameplay doesn't really click you might get bored easy. should probably emulate one of the originals or thugpro or something to see if you like the style. they're also a lot less fun alone imo but that's probably mostly sleepover nostalgia too
