Monotype runs are the only way to inject difficulty into the game without doing a Nuzlocke but yeah
Grass starters tend to have high stats in their first stage and the lowest stats in their third (before they started locking them to the same BST with gen 5 (excluding Gen 6 and PLA))
You're supposed to catch more Pokemon, anon. I have a Fire, Water, and Grass Pokemon on nearly every run of a game I do and don't notice any problems.
