by the time developers are done with their games the games are a mess because they never really thought about how it plays or if its fun and they've put so much work into it, it would give them a feeling of deep grief to get rid of major areas that they worked years on.

If everything was condensed down to simple stuff all the time there wouldn't be much of a depth or skill ceiling. Extra classes exist to create variety and options, specializing in different use cases that may have problems in one part of a game but excel in others.

Is Tactics Advance and A2 the only FF games that allow you to choose both race AND class (though races are limited in classes)? Seems wasteful, it would be fun as hell to add in races for some additional customization and variety.
The MMOs too, probably not what you're looking for though. Some of the Crystal Chronicles games also do Race as Class.
what does assassin do that warrior and thief don't?
Assassin focused on instakills, Thief focused on utility outside of combat. (acrobatics, lockpicking, trap disarming, etc.) In later editions they just merged them under Rogue and made any differences shine as subclasses you can pick

Warrior implies training, or at least proficiency, in a variety of armaments and fighting styles, while something like Soldier implies a profession, instead. Thief could imply someone who steals by any means, but more often is just a rogue specialized in practical, non combative stealth, and generally not using magic. Assassin implies primarily combat oriented stealth, perhaps just enough to isolate their target, but then the killing itself is often quite violent and loud.
monk at least has an obvious niche of being some weeb kung fu shit, depending on how you look at it assassin is either a bad thief that got caught or a thief is an assassin that isn't a sociopath

This game is such a snore and cryptic as hell. Also the entire team just despises each other. I dropped the game at the tree area and then my schizo brother deleted it after trying to come back to finish it.
Voidspire Tactics is a great one that isn't well known. There's also Tactics Ogre (do the remake) and Final Fantasy Tactics which are fantastic classics of the genre. Starcrawlers was also decent and somewhat unheard of.
Without 2 dedicated damage dealers your DPS output will not be enough. Either the mobs will widdle your healer's MP down through attrition or they will enter an enraged state after so much foreplay and become too strong to outstat. Also magic resistant mobs are common enough that the tank's physical DPS will not be enough. You need another physical damage dealer in there. Or a support/healer that uses items and can buff DPS.
Stacking classes is more fun than having a jack of all trades party

I prefer variety. Stacking classes is always a linear process and doesn't allow you to really experiment and customize as much.
If the classes are fleshed out enough it lets you make each of them unique when levelling them, making it a moot point.
