Base game and Winter Assault had good plot.
Plot variety is highest in Dark Crusade/Soulstorm but Dark Crusade has the generally accepted best series gameplay, and Soulstorm is a modding platform for maximum content.
Up there with AoE as one of the best RTS games of all time. Excellent campaign. Winter Assault is the best game.
Perfect voice acting for the setting. Hammy but fun.

Almost every game/patch has had balance issues (Eldar was always OP) but that's really only a problem in multiplayer. Relic were always shit at balancing.
I remember making ladder-climbers cry and seethe on the Relic Forums with attack move Defiler spam in patch 1.3 as the autocannons were bugged.
As a Warcraft and Starcraft babby I've found they both go too far in opposite directions. AoE is much too simplified. DoW is a fantastic and unique experience and it only comes second to Age of Mythology.

It's honestly amazing how much they got right with the soundtrack. Although for me it was the Chaos marine soundtrack
DOWII's expansion OST did so well for Chaos but you are right, that Chaos theme defines them for me.
