I'm currently learning Japanese so I avoid the Japanese games atm in order to be able to play them in Japanese later, but I'll definitely check Disgaea.

It really comes down to a handful of playthroughs. There's infinite tiny permutations, but when it comes to big stuff you'd actually care about or even tidbits of lore and such, there's only 5 major variants (all-in one major stat x4 and well-rounded) and at most 24 sub-variants amid the 4 major stat focus setups.
And only the most deranged of fans are going to go to that much. Most people who like it will do 2 or 3 runs max.

Coming from someone who played DF since it was a 2D game with only one z-level: Demands for a steam release utterly butt fricked it into an unplayable state. The user interface rewrite required from the graphical rewrite basically gutted every single hotkey and once again destroyed muscle memory of what keys to hit.
For you, this doesn't mean much, but you have to keep in mind that with DF prior to steam, you could effect any screen with hotkeys. ANY screen, with hotkeys. And hotkeys can be macro'd with an in-game key recording. Almost anything in the game could be setup once and be repeated with loading and playing a macro.
... Modern DF has multiple interface screens that have zero hotkeys.
That's the current state of steam DF.
Oh, and adventure mode isn't done "until april" allegedly, but DF uses Toady Time so who the frick knows. Don't play steam, play an older version.

If you didn't like rimworld idk why you'd like DF all the fun comes from following the "stories". It took like 5+ hours of watching videos to understand the game for me but I don't really care to do that myself so I just made a nice base over 10-20 hours and then got bored too

every menu still has multiple steps and instead of using hotkeys that multiple hands can press as quickly as you can type, you're now restricted to mouse clicks that have multiple seconds between interface actions.
keep in mind that frame rate issues STILL have not been properly dealt with, and game speed is tied to frame rate. this makes a slow colony building game EVEN SLOWER.

Those games seen to only have one hand crafted world and a single storyline, maybe will a couple branches.
Maybe good for like 3 playthroughs to do a couple different playstyles/builds. "moderatly replayable" compared to factorio/minecraft/city skylines
I guess unironically we could talk about old school mmos like maple story etc that actually do have a lot of different ways to play em

Portal is short and sweet, you can play through it in one sitting maybe. Fun on a rainy day.
Cuphead is quite pleasant, I've played that game co-op about six times with different people and it was a blast every time.
Cataclysm: Dark Days Ahead or Bright Nights depending on which side of the tribal war you want to be.

If you have advanced autism learn dwarf fortress or a paradox game

Has a minor amount of RNG from map seeds and your recruitment pod, but has a large focus on playing with the environment to make it habitable.
The different map types provide different challenges, but even just the base map is pretty fun.
Loose industrial theme with potential for automation of systems.
Civilization games are a go-to, but I think of those more as individual matches more than replays.
It's Japanese, but far-removed from the standard, Tactical Nexus.
Extremely autistic and you'll get a ton of replay value out of it optimizing levels and redoing levels with stat bonuses.
