What are some RPGs that a roleplayer should try at least once in their life? A sort of Appendix N for RPGs other than D&D. Not necessarily because they're popular but to experience the full range of what RPGs have to offer. My personal 5 would be:

D6 Star Wars was more about trying to emulate the feel of a movie than a normal TTRPG. A lot of the lore of the UE came from or was inspired by the work WEG did flushing out the lore early on if I'm not mistaken. It's a fun and simple system that moves quickly. 2e is probs the way to go since a lot of the books where remade for it but the editions are close enough to be used interchangeably with minor tweaks. If you are a fan of the OT it's a blast to roll up a party of misfits and smuggle illegal contraband only to get wrapped up in a plot to kill a high ranking imperial.
Traveller is very good but it doesn't have the nostalgia factor of being Star Wars.
Stick something like FATE or Firefly/Cortex on there, so that people get a taste of bennie-passing narrative stuff.
Something autistic like Phoenix Command to show the depths of number depravity.
GURPS, obviously, to show what it's like to have a system more like Lego than Hotwheels.

WEG Star Wars gets mentioned quite a lot here. What does it do that Traveller doesn't?
Same for Sword World. It sounds like a very niche Japanese system. What does it do that D&D doesn't?
Play it and find out! It has a much more pulp tone, nice consistent skill rolls with a good bell curve, force points and powers are enjoyable, the vehicle rules are more loose and to my mind more exciting, and the injury rules are good. Mini Six improves on things by reducing the number of opposed rolls and making Hero Points work for your character more widely.
Literally as many games as you can get to play.

Aces and Eights and Hackmaster has a cool count based combat system that's on the opposite side of the spectrum from the powered by the apocalypse games. It's worth a look
Burning Wheel. It has a lot of basic rules (Let it Ride, Describe what failure looks like before the roll, Intent and Task) that are widely applicable and in general has a very unique perspective.
