What are some RPGs where you can equip armor /outfit by pieces? Preferably more in-depth than just equipping single piece suits and helmets(gloves, shoes, belts ect)

It will never be finished, but the latest build is already 20-30 hours of content (with all side quests and character storylines, but not counting NG+ or hunting for achievements).
Is it similar to Violated Heroine, another never-ever RPG?
Can she get knocked up by monsters? Yes.
But the tone is closer to Fear and Hunger - grim and gritty, early game can be struggle just to keep the poor girl fed. There's also number of references and some offensive humor - which can break immersion or deter some people.
Real time combat, 5 main stats, 20-ish "perks", 3 main playstyles to choose from or hybridize between.
Back to the topic of visual customization I obviously forgot hairstyles and hair colors.
What exactly is the "balance" when it comes to this? Like, how far before you consider the in-depth customization as autism?
You say that like autism, in the sense that you mean it, is a bad thing. Fiddling with equipment is fun.
If it requires you to minmax, it's autism. If you can just equip cool stuff and it works, it's fine.

Conan Exiles
the first playthrough of Conan Exiles is everything i could ever want from a game. The whole experience of seeing what is needed to make certain armours and having no idea where those things even are, forcing exploration is just perfect.
The gigantic empty map full of bullshit I feel is the exact sort of exploration i want, with the climbing mechanic making it more meaningful than even TOTK where theres nothing really to climb except small traversal obstacles.
In Conan, preparing for a long journey at your base then trekking to and climbing the entire mountain to find some butthole at the top and enslaving him is peak open world RPG
