It's because of low sens arm aiming, just look at how much of his arm is on the desk. It also makes more sense for tac shooters like CS or Valorant because those games are mostly about holding angles and aiming in small spaces compared to something like Apex or OW. It pisses me off that 50x50 mousepads aren't common place among the bigger companies.
