ffv ancient cave and ffv advanced custom classes are the only 2 i can really recommend.
i'm mainly familiar with the FF franchise along with the tactics series and each of those games has at least 1 large fan mod for it that does something to enhance difficulty or otherwise shakeup the gameplay.
None of them I would really recommend in good faith, they are just there for if you are an autist that wants more than what your favorite RPG already offers.

Does this increase the difficulty at all to offset the improvements to the players arsenal? That looks really fun but FFV is already pretty easy.

What's the pokemon romhack where you choose the town you begin in and your starter from a list of like 20 pokemon, and the gym leaders can be fought in any order with their roster being determined by how many badges you already have?
As already stated that's Pokemon Crystal Clear based on Crystal ver and it's easily the best Gen 2 romhack out there. It effectively turns Gen 2 into an open-world game, and doesn't frick it up in the slightest.

That's neat, i think that's how gyms work in universe. Leaders have different teams for the challenger's level
