Bounty hunter was really good. Gameplay was similar to James Bond games in terms of missions and “gadgets” which in Bounty hunter is the flamethrower, jet pack, blasters, etc. still holds up, was just playing it a couple days ago.

only one i played through was super star wars and it sucked shit. tried shadow of the empire on the N64 and it was janky as frick too. seems like all the games are crap.
just the first 3 stages played together was an absolute gem of an experience at the time

Jedi Knight: Dark Forces 2. It captured the gritty pre-prequels Star Wars atmosphere better than any other Star Wars game IMO.
