i barely remember anything about the books other than the big battle was pretty good and geralt's adventurer band were much more enjoyable to read about than yen and ciri, and the author just randomly killed them all off at the end to get them out of the way, geralt's adventurer band even had a little girl who was better than ciri too

Dude, we've barely begun working on it, and are still figuring out how much of an impact the import save function will have (there will be one); which characters, if any, will be present from the previous games, etc.
What I can say for certain is that the region will be a northern one, and one currently unmapped (to be fair, Sapkowski himself only mapped/described a tiny portion of the continent, so we have a lot of room).
Since the region will be even further north than Tameria et. al, I wouldn't expect too many non-whites.
There are some talks/concept art about including fantasy Intuits.

Anon, only Geralt has white hair amongst the Witchers. His Trials went unexpectedly smoothly, so the over-excited mages and alchemists of the Wolf School gave him additional treatments. One of the side effects was the white hair.

His reflexes and healing factor are even better, and he's also better at magic - though that last one may be the effect of his biological mother being a sorceress.
Also, the Trial of Grass is only one of the Trials. Two others are mentioned - the Trial of Sleep and the Trial of Mountains - though those have different purposes.

The Trial of Sleep serves to erase the boys' memories of their previous lives.
The Trial of Mountains is used to ascertain whether a boy underwent his mutations properly - it isn't described in detail, but a boy whose mutations are flawed will not survive. Not every boy goes through this trial.

Really really low. Going from Witcher 3 quality to Cyberpunk 2077 quality in one video game is drastic. They took a deep dive down a rocky cliff and i don't think they will ever recover. There hasn't been one video game studio that recovered from making a AAA game to a piece of shit. Usually, if a game isn't as good you can forgive that. But to fall so low? Never.
