I sometimes forget there are people that pretend there is any real issue with the bottom that your image can show. The only issue anyone had was they made the facial expressions less extreme. Not that they made his wasian look like different wasian
aside from asinine reasons like "old thing" or "thing i like", its the little details that would go unnoticed but are there because the dev put the extra mile to adding it, either be some neat mechanics or small details
late 90s/early 2000s graphics that tried for realism, but due to how primitive they look they feel unique now and are a style of their own, where your imagination fills in the gaps. obviously cartoony graphics from that time don't have the soul.
SOUL = games made purely out of passion, dedication and love. These games will usually have a ton of attention to detail in every regard, whether it's story/dialogue/lore/characters/animations/graphics/environments/movement/etc.
SOULLESS = games made purely for profit. These games will usually have a ton of things where you can just tell that the developers went "frick it, it's good enough" and did the bare minimum possible.
If you have played video games for long enough, then you will know which games have SOUL and which games are SOULLESS. There's also a fairly new thing that has started to pop up which I like to call FAKE SOUL where either some indie dev or some AAA dev attempts to make a game seem like it has SOUL, but you can just tell that it's artificial.
Soul is that point where a game becomes greater than the sum of its parts. Soul is NOT reliant necessarily on polish in of itself - one would describe say.... EYE divine cybermancy as a soulful game but is jank as frick. Conversely GTA V is a technical marvel almost unparalleled by any other game but it does not have the soul because all those expertly crafted bits that make up the game are never anything more than that.
Those spamming the "old good, new bad" meme are the exact people who do not understand what soul is and are confused due to misinterpreting those old soulful games as being all there is. There are a mountain of old soulless games that are forgotten because they are not worth remembering. The nature of AAA game development these days means soul in big budget titles is a lot rarer but it still exists . The real issue that Ganker struggles with is a matter of age - Ganker's userbase is mostly very young and has only been exposed to games that are marketed precisely to them with the sole purpose of getting as much money as fast as possible and little caring for anything beyond the first few hours of gaming (the statistics show most people don't beat games and only play them for a couple hours - the epitome of the consooming->hype cycle).
Sadly these individuals will not go and explore the myriad of options available to them (especially in the PC space) where many examples of soulful games in your genre of choice exist.
tl;dr soul isn't easily defined, you know it when you experience it and the modern gamer crowd has very little exposure to it.
Art style. A lot of old games not having great graphics had to entirely rely on their art team for visuals which means that a lot of graphics had intent and planning behind it.
That's why it's not an old vs new thing, since new games with soul are the ones with less real graphics(though some realistic graphics games got soul).
I find that being able to see a game and run it at a playable framerate is the epitome of SOVLLESS. I have a 256k Cirrus Logic ISA card, and that's all you'll ever need.

Let's look at majora's mask a game made in like a year with basically zero budget.
The developers had a clear vision and used everything they could to achieve that vision even if they reused most assets from OOT.
Attention to detail and small little things that show this wasn't "just another project" to the devs but that they were willing to actually get all close and personal with the game and put in all sort of special touches while making sure everything is just right
Passion creates soul, and that creates the atmosphere, immersion, and gameplay that keeps you coming back for more.
That's why corporate mass production of vidya makes incredibly impressive yet extremely bland garbage.
A nerd with passion can turn a few pixels into something beautiful, a 1000 diversity hires can create a hyper realistic scene that puts you to sleep.
When you can tell a work is an extension of the persons who created it, that is soul, instead of being made by numbers. Not that soullessness is necessarily a bad thing, "cheaply" made stuff of reasonable quality always has a place but when it's all that there is is when it becomes unfortuitous.
