To be honest, playing Persona as a high schooler seems kinda sad. Why wouldn’t you just, you know, go be a high schooler in real life rather than pretending in a game?
What does it offer besides the waifus? Thinking of marathoning the mainline entries.
P1 and the P2 duology are very different from the other games in the series, both in mechanics and in tone. They lean much more heavily toward the SMT atmosphere and don't have any of the social mechanics the series became known for after P3. I'd say P1-P3 are all great, P4 is okay, and P5 is cringe. If you like P1 then go back and check out the classic SMTs too.
Easier SMT that's still fun in its own right with no focus on law/chaos/neutral post apocalyptic shit but a focus on more character drama + whatever supernatural frickery. Solid OSTs
People call Persona waifu games but the waifu content is actually garbage. The pre-romance stuff has all the focus, especially since you can friendzone all of them outside of vanilla P3. The actual romance scenes are trash, and you're probably never going to do the optional ones since they eat into your time for more important things.

Persona 1 has one of the most moronic dungeons in the entire series, or in any game I've ever played. I don't remember which one it was but imagine getting lost in a daggerfall dungeon with a high random encounter rate.
P1 kind of sucks, just obnoxious amounts of random battles and it's a bit cruel at times. Although that run to the Velvet Room and time spent there where you just kind of chill while figuring out how the hell fusion works, all the while School Days is playing in the background, it's a sublime moment you have to experience.
P1 and P2 are worth playing along with the rest of the MegaTen games from that era, as Atlus throwing shit at the wall after SMT2 to see what direction they wanted to go in for SMT3 and settling on most boringly mediocre option.
2 and 3 have decent stories and characters, 4 is mostly hebe waifus and comfy feels, 5 is worse story and waifus but more streamlined and visually striking
