For me, it's Final Fantasy VII. I tried yet again to finish that game and got bored even before blowing up the reactor thing at the beginning. How can I get to enjoy turn based combat?

any fighting game.
Warframe, want to hop in to unlock a neat new frame, remember that it'll require a lot of grinding, play some grineer endless mission for a few minutes, hop out. I think I'm just grinded out of WF for a long while.

You don't. It's genuinely just bad and people basically only like it because they're the kinds of stupid people who latch on to things that make them feel smart when not much of anything is really going on and are just tricked by that stuff. Ironically the remake in principle actually gets the combat right, but otherwise fricks up so much it isn't worth playing.
For me it's the opposite for some games but especially Atelier.
I have to force myself to actually launch it but then play it for hours just fine.
Set it to Active and crank up the battle speed. Same goes for most other ATB titles.

ff7 is broken once you get yuffie's ultimate weapon and morph. she breaks the game. you can morph enemies into sources
Bloodborne, i always think about the amazing music and visual designs, and then when im playing i remember how dogshit the bosses are.

I'm a 29 year old boomer and I get smoked by these zoomers.
Every game. I have like six started games: Alan Wake 2, Death Stranding, Pillars of Eternity 2, Hi-Fi Rush, Sifu, Lies of P.
But I have... something, I dunno, stress, burnout? The idea of picking up these games where Iam already a third of halfwa through fills me with dread as I need to set myself into all the systems and remember the story. So I ignored all those and are now playing Potato Flowers in Full Bloom.
I recently finished death stranding and picked Alan Wake 2 up once I got my 4080s. It's also got me on a spooky kick watching X-files
I'd recommend those two first. It's refreshing playing games where I'm not zooming around shooting and whatnot. Take your time and enjoy them.

Me, I feel like it's never a good time to play, I've no idea where this comes from but I take the plunge launch the game and actually enjoy playing and like you said lose myself for hours.

I don't have as hard of a time actually forcing myself to do it, but "why would I play it, I don't actually feel like playing it, I feel like procrastinating instead" is a common feeling. Then I realize I'm going to do absolutely frick all that way, waste hours bored out of my mind, and probably get into a stupid argument or two on Ganker, so I launch it anyway.
Flip a coin, if it's heads, play it, if it's tails, do something else.
same, I've played I~VI and had a fricking blast, I have never been able to get into VII, I tried again 3 months ago but gave up.
Any Puzzle game for me.
I'm not very smart but like to feel like I am so when I get filtered by anything a actually hard I get very angry.
That's pretty valid, it's a pretty basic and mediocre jrpg.

When you find out let me know. I need more mechanics in place to keep me interested. Bravely Default kinda killed everything else for me. Mana Khemia was cool with the turn order manipulation.
