Hero and the two-three coolest guys available. I rarely use female characters unless they're clearly superior (KOS-MOS comes to mind) or required.
My FFX party was Tidus, Wakka and Auron.
I loved FF15's cast of bros, it's a shame the game isn't very good.

game mechanics-wise, FF4 was peak party composition perfection

The ideal party varies a lot depending on the party size. A 3 person group is going to be a lot different from a 6 person group or an 8 person group - which is what I'm presenting here.
