the party-style icons (ie the one floette has) are different from the proper renders in home , and have been floating around for months now, (I think they were for a ranked battle database sort of thing? I don't remember) so it's not like they're intended as replacements for the in-app home renders.
and it's definitely not just a case of them creating icons for every design, because the GMaxes are completely absent despite being in and having renders in home.
that said, It seems difficult to justify AZ Floette appearing in anything but kalos remakes, but it is weird for them to bother changing the move description now when that should (in theory) be years away

Almost every (maybe literally every) single item introduced since gen 3 has data in scarlet and violet, even things like the mach and acro bike, all the power gems, and even shit like the unused god stone from black and white.

the SWSH beta showed that a shit ton of pokes were originally coded into the game but were all removed in the final build... only for some to be re added with the DLC

Oh yeah and all of the legends arceus have item entries in scarlet and violet too lol. the reason is presumably to keep some level of consistency when using reference variables. All of the items and moves have the same index numbers between every game, so I guess it probably has more to do with ease of reusing the information. keep in mind just because the items have entries in the games doesn't mean that they have any functionality. all of the moves and their types all still exist, even the ones that were taken out, but they all just have a generic "you should delete this move" description. all of that stuff even exists in lets go pikachu and eevee, even though that game removed a bunch of core features. it even has all the pokemon after first gen listed with their names and types, they just don't have any models. pretty sure they all just default to pikachu. as for the pokemon themselves, just because they have the models available, they would have to rework the animations for every pokemon to fit the new mechanics in every game. who knows why they do what they do. autism i guess.
