Verbal transmission, vision quests, etc. The vedas literally explain this.
Only one I've ever managed to complete was Legend of Grimrock so I guess that but I'm not sure why I liked it enough to finish it. I usually stop playing them after 5-10 hours but I do enjoy them for the time I play them. I recently picked up a bunch so maybe I'll find another I like.
Morrowind and STALKER Anomaly. As for other non-RPG fantasy games; HeXen, Heretic, Ultima Underworld, Arx Fatalis, Dark Messiah, Delver, King's Field, Shadow Tower Abyss. What else, oh yes, Arkane's entire catalogue except their recent Black person simulator. Prey (2017) is a phenomenal experience and Dishonored 2's level design is pure 200 IQ kino, I can't believe a troony made it, holy frick - a troony made it. Prey has way better art direction than Starfield too.
But yeah, something about those brooding, low res textures, dark fantasy games just pulls me in. Wrath of Cronos mod for HeXen/Heretic is kino especially when paired with the Cult of Despair wad. Fricking delicious, definitely my kink.

Technically Everquest but if we're talking grid-based blobbers, then Eye of the Beholder.
Both games win by default as I haven't played many of them.

It was always Morrowind for me, but I think after playing Kingdom Come: Deliverance that might have edged it out. I'll always love Morrowind's setting, lore and world building, but KCD is more fun to play.
GOG is fine I'm sure. Don't do the port, the different rendering makes the game uglier imo. Some people b***h about the original's controls, but you'll adapt quickly and be dancing in combat with the just the mouse.
You may want to look into emulating MT-32 for the best music experience (or using a comparable soundfont), if you care about that sort of thing.

Is the game supposed to make random sounds every time someone walks or does something. I don't remember that when I played it as a kid with my dad.
