AtLA was mismanaged within the original series. Season 3 was hit or miss and the lack of any build up to the final episode really hampered any chance of a satisfying payoff. Also Aang is never really challenged on his beliefs and never actually grows any. This was done so that the writers could satisfy their hippie biases. Also Zutara for life, frick the canon pairings.
I agree season 3 had a lot of filler but the worst of it is still miles better than anything since
3 also had some of the best episodes in the series like The Puppetmaster, Sokka's Master, and The Boiling Rock

El Tigre was a nice series, and the Hispanic aesthetics were cool to look at. I don't know if any other series out there is similar.
El Tigre holds a special place in my heart somewhere around freshman year of highschool because it was the only show that was usually on when I either was too sick to go to school or played hooky
They barely aired the damn show outside of school hours I don't know why. It was pretty decent
there's The Book of Life which has wooden puppet stylized character designed by the El Tigre character artist, Manny and Frida cameo in one frame in the background at the beginning.

Set it a few centuries before the show in a period that hasn't been covered so you can work with a clean slate, KOTOR style (you will eventually disregard canon altogether). Don't worry about tech levels, just make it like the show, again KOTOR style.
First game, play as Earth nation Avatar. Then go in order for sequels.
Plotwise, they could centre around conflict between nations.
