The addition of the Gun Sword from Lost Planet 2 as a new weapon class in the next expansion
An update that shows a massive amount of LS nerfs and one buff for HH for patch notes. It would be a funny parallel to what actually happened
Big Bird in Metroid Dread fricked me up for a while
big bird was definitely one of the coolest boss fights in all metroid games and an unusually hard and satisfying boss from nintendo. i always had the opinion that the one thing nintendo just cant get right are bossfigts, most evident by the entire zelda series. theres maybe one or two good final bosses in the entire series but raven beak was a pleasant surprise
the Elemental Core from the Jack's game on Hard. Damn near unbeatable
watched Max play that, just looked absolutely not fun at all

I.... that's a good question. Only 2021 game I own with a kind of final boss is Monster Hunter Rise and I haven't even gotten to the end game yet. Been too busy goofing off and trying to grind Kamura Tickets (seriously, why are these such a pain in the ass to get?).
despite the patch release order Fatalis isn't the final boss. Technically you can beat Fatalis's quests before beating Alatreon's which is especially funny when the Fatalis questline requires you to fight a weakened Alatreon. I think Raging Brachy/Furious Jang or slaying Safi could also be your final boss
A couple bosses in Ender Lillies were pretty hard, but beyond that tough to say, not many games this year I've played.
