Honestly, I never cared much for the Final Fantasy Series after X.
Also, the Chrono series should have had a 3rd installment.

How much of Daggerfall is handcrafted content? Because I'm not the biggest fan going through randomly generated stuff all the time
It's always getting new content via mods but I think they should make a LLM to write quests

None of it, even the handcrafted content is slapped together from procgen modules.
The story dungeons are unique, but do have a randomly generated dungeon tacked on to it. So if you stay on the right path, you are okay.
