To be honest I've only seen The Expanse and Firefly, just listing the rest cause they range from popular to semi-popular enough to justify why Starfield would want to go for this angle.
Alien! That's another great example. That basically created the whole damn genre of blue collar sci-fi, even if the Predator crossover and Prometheus impact the human-centric angle.
I can understand human-centric scifi, I just dislike the NASApunk aesthetic. "Star wars with no aliens" may sound like a pejorative, but I actually like Firefly. WWII combat and cowboys in space isn't even slightly how space flight, combat, or exploration would actually be, but it is a hell of a lot more fun.

Its not No Mans Sky where every planet has life on it and as result exploring its infinite universe is boring because every planet is the same. Even if 50% of the planets had life on them it'd be a boring experience. 10% is the right number, rare enough that its special when you find a planet with life on it. As for the 900 without you don't have to spend your whole playthrough on them, just collect the resources you need a go look for a more interesting one or stay and destroy a pirate base, or help some stranded miners or researchers, explore a crashed ship or an alien ruin. These planets will not be as empty as you think. They won't follow the 40 second rule but they won't be completely barren either.

They will be barren, but they will be cinematic and have aesthetic environments that will be epic to move around, unlike NMS where it looks kinda janky.
