When are you ever interacting with a real Gen Z face to face? The answer is never. The image you've formed of your audience has come filtered through solely online interaction, mainly Twitter and YouTube content.
Imagine if there was a massive thermonuclear war and the only thing that survived for future archaeologists to piece together what daily life was like in our society were logs from a forum dedicated to discussing Marvel movies. That's essentially the level of accuracy Creative Assembly had at identifying their demographic.
