I think he's specifically talking about the way TotK organizes things into "Side Quests" and "Side Adventures" so you automatically know whether a side thing is gonna be a short little frickaround thing or an hours long ordeal.

You could have said anything else about the game but the side quest are garbage. Yakuza is the best for side quests that i’ve played but most companies wouldn’t put the same effort that they put in their side quests and the ones that come close aren’t nearly as entertaining

Someone here correctly said that many Nintendo fans resemble cults, so they remain within the Nintendo ecosystem and don't play as many games. So their knowledge of game mechanics and design are extremely limited.
The side quest in both breath of the wild and tears of the kingdom are pretty lackluster. I'm convinced that japanese creators only consider them filler and don't believe they need to be fleshed out or part of the core experience.
