Old games had fake shadows so everything is manually adjusted because engine rendered shadows were taxing on old hardware (circle shadows on floor on your character etc.). This result to devs adjusting to what was pleasing to the eyes instead of fully relying on rendered shadows. Basically devs weren't lazy fricks

I'm guessing as newer game engines got better with ray tracing, developers would rely on the engine's lighting instead of artificially adding shading into the textures. Spyro games really went out of their way to change the lighting so it adds color to the environment and their efforts paid off big time. Early Spyro games look very aesthetically pleasing and colorful.
64 games usually have a small selection of colors, repeated low res textures smeared over huge polygons. You'd know this if you played the console but I don't blame you for avoiding it. It hasn't aged well.
