Why did they call him Pokemon Trainer and not just Red? The design is directly and specifically taken from his design from FireRed and LeafGreen and the protagonist of the Kanto games was already well known to have an official name at that point due to Gold and Silver.
Every other character in Smash that uses a generic name does so because they have no official name (Villager, Wii Fit Trainer). Everyone else like Byleth, Robin and Link use their official names.

My question is why they name Joker from Persona 5, he had many different names depending on the media.

Not clearly. They actually had it planned for the Pokemon World tournament on B2/W2, but ultimately scrapped it for whatever reason.
It seems weirdly late into development they scrapped it, considering they even translated the losing cutscene for them, but it's clearly not far enough along. Maybe they started working on it too close to the release date?
My only guess is that they were planning to have the team of Hilbert/Hilda be based on the team the player used in BW via memory link, and might have been too hard, or they knew people would cheese it and give them shit mon
But that's just a wild guess, memory link gives them a good excuse to make a returning player character have their old mon, where Red's Pokemon were based on Pokemon you could find as a part of the plot or gifted too you

The same reason Villager is called Villager or Hero is called Hero
Despite how they look, they're meant to be stand ins for the player character of those series in general

Villager doesn't have a canon name and never has. Same for Hero (though some of his alts do have canon names).
All other examples of nameable self-insert protagonists use their canon name (Byleth, Robin, Link) or some canon representative title specific to them (Joker).
Comparing to others
Should be pointed out Pokemon Trainer acts nothing like Red as well, as Red is commonly shown as stoic and rarely if ever talks, PT roots for his Pokemon and smiles

That's pretty much how it always was, specially at the time. But the fanbase's perception of the MCs and Red in particular is very warped.
Its only a recent phenomenon that they decided to exploit the MCs.

All of Hero’s alts have canon names and Sakurai even mentioned them when doing his presentation of Hero. They could have easily gone the bowser jr route of having the default one be called Luminary/Eleven and the others having their canon names, but Hero is probably a better fit for representing DQ.
At the time of Brawl’s release when Red’s only NPC appearance were the original GSC you could easily dismiss the ellipsis as a one time thing given that he talks in every other depiction and the whole copycat girl thing in gen 1.
The entire "Red doesn't talk" shit was just moronic fanon that GF decided to run with because they don't want to piss off Red fangirls. All his actual early appearance have him portrayed as quite friendly and talkative.

I've seen people ask for a second Pokemon Trainer all the time, in reality, because how PT is handled, I could honestly only logically see them making a Rival ...or more realistically Blue to go with the choice of Red and Leaf as PT, a trainer, since the rival is honestly the second most important character in a Pokemon game, only behind the player
I could also see the PLA protag a member of the The Survey Corps playable if they wanted to experiment and have a trainer that's directly in battle, and like call out their Pokemon for attacks, but that's pushing it I'd say

To fit with the Pokémon used, you'd get Red, Green/Leaf, Chase, and Elaine with 2 colors each.
Shut the frick up you autistic moron, it needed a name that would work and could get recognized immediately by people. Not everyone knows who Red is, smash has a huge audience, this works better.
