Because they became popular and wanted to be accessible to players beyond the RPG crowd, which resulted in the players outside the original audience demanding representation in fictional worlds that were getting along just fine without things like nonbinary crippled dragons.
They don't have social worlds anymore, really. You can't compare XIV with everyone holed up in Discord to the community feel of even somewhat barebones old MMOs like SWG.
