It's weird, because at one point sports games were abstracted enough that they were seen not too differently from other games, but at some point they became the 'seasonal' thing they are now and focused entirely on replicating what's going on in some actual sport right now.

What a normie wants in a video game is something he can play with his normie friends after work, or something open world with a bloated amount of content because in the normie mind it means they can play it "forever".
The normie picks up maybe 1-3 games a year at most, and its always the $60 AAA. There is a reason AAA has gone to shit; it appeals to these people who don't know any better and think a game with 60+ hours of content is the best thing ever, the actual quality of said content be damned. Either that, or its a shooter with quick fast paced matches that let the normie play 1-2 matches before moving on with his life.
Sports games are also popular because the normie just watches sports when he is bored, and then plays the sports game so he can larp as the sports guy he wishes he was instead (and the AAA publishers obviously know this and make the games gacha fests for max profits).
