Why do people say it's difficult to go back to NES games? Just use a newer controller with a thumbstick and pretend you're playing an indiepixel game and things work just fine.

A handful of autistic zoomer trash does not mean a ton of people say this.
It's a combination of moronic things that zoomers have trouble with:
-They emulate older games using shitty controllers like 8bitdo which have notoriously bad d-pads and lots of other issues
-They also emulate on terrible modern tv's, input lag is very high and makes games far more difficult than they're supposed to be
-They don't understand the concept of developing skill in games, so they expect to be able to beat NES games quickly because they heard they are short. When in reality you have to play them repeatedly for weeks to build up the skill.
-They abuse save states which actually makes games feel harder than they really are, and using states ensures you never ever get any better

It took only a few hours for me to practice with save states and 1cc Super C with only a few deaths. If it takes weeks you're either a child or only playing ten minutes when you're home from waging before sleeping

Not me, I use emulators on PC with mouse and keyboard.
Right click with mouse jumps.
Left click with mouse attacks.
WASD for directions such as climbing up and down, moving left and right, or sometimes walking up or downwards.
Other keys for other stuff.
If game has joystick then mouse movement becomes the main one.
your example is a 2D platformer - a genre that hasn't progressed at all from the SNES
NES RPGs are near unplayable in comparison
DQIII is fantastic, but then again I played the remake.

Zero mission also has larger sprites and more overt-hand holding in the level design. The original needs a proper remake without any of that.

NES was more experimental and had a greater variety of titles, especially if you go into famicom games.
The only thing that's makes it more difficult is the lack of saving for some games and limited number of continues. Zoomer normalgays are just impatient.
I've been playing almost only nes for a month. I'm a gen 5 kid, so I never expirienced nes on original hardware:
- I played gb color till ds but playing with the equivalent of X O is torture (expecially when O is jump). My standard is Square X.
- many games are harder not because muh skills but because they last 40min (I say this even if Castlevania 1 is my favorite game).
- many games are hardest because frick USA version that rapes kids who just wanna borrow games for the weekend.
- you need to be an entusiast to know what to play beside killer apps, since most gems are jap only or fan translated only.
- you need to actually go and read the manual sometimes (I don't remember what shmup you change weapon/speed with select)
- since we are talking shmups, button mashing is not fun.
- you need to be conscious on when to save (state) because you can't save, and going by with a 16 letter password is the second dictionary definition trash.
- people say they like pixel art, but nes is "not enough pixels".
Also, maybe the most important thing, is the tolerance for bullshit of any kind the games will throw at you. This is more a fortitude thing in general.

Can you give a specific example? This was a problem with a lot of Atari and Coleco games, but 8bit graphics were refined enough for proper distinctions.
